Well that wheel well skirt was already drawn there in the original pic if you’d look at it. I only deleted the wheels lol. No idea why their sketch had that
Obviously I’ll do box cavity sides, but even without those, I should see some type of aero improvement with the extended rear diffuser and longer spoiler right?

The stuff in single quotes was sarcasm.
Boxing the cavity would be much simplified if the top of the box is at that crease line that flows over the door handles and through the tail lights. With a Gurney flap on the stock spoiler.
The diffuser needs fences. The outer fences can flare out behind the rear tires and act as an open-faced spat.

What's really sad is my ability to Photochop. The GIMP on this OS is sketchy, but I selected a region, fill with black, shrunk by one pixel and filled with white. Note the wickerbill.

Consider it a general cross section.
The sides would need to incorporate plan taper, wheelwell skirts, and skegs that serve for wheel spats and outer fences for the diffuser.

1) Since the IONIQ already fits under the Aerodynamic Streamlining Template, 2013, 3rd-edition, I recommend that both of your spoilers be fitted to follow that contour.
2) Then fill in the sides, to enclose them into an airtight tail, like Mercede's 2016 IAA, but without the styling 'rake', a purely 'vertical' chop.
3) I have very little confidence that two spoilers could provide any meaningful drag reduction on their own. It's never been done by anyone else, ever!

1) It's never been done.
2) Two surfaces of the body will be experiencing pressure increase, while two surfaces will be in separated flow.
3) The wake is going to take on the low pressure of the separation line at the sides, not at the rear of the spoilers. It's explained in your book, "Modifying the Aerodynamics of........................, Figure 4-14, page 80.
4) Hyundai's OEM diffuser is an unknown quantity. Without a full belly pan in front of it, by default, it cannot be effective, and may just be serving as an aerodynamic 'styling cue.'
