They have a unibody. So I’ll have a lot of fab work to shorten and strengthen the floor boards.

It seems like you could mark the outline of the Ghia pan (shaped differently to a Beetle) and cut away the excess.

Something you may want to consider as an option... put the front end of the Prius under the REAR of the Ghia and keep the forward floorpan and front suspension in place. This would create a mid-engine car whose handling should be good.
I remember when Pontiac did this same thing to create the Fiero on the cheap. The power train and suspension in the rear of the Fiero was the same as the front drive power train used in the Sunbird/J200. GM just tied down the steering arms so that the rear wouldn't steer.

Took front clip off the Prius and ran the tape measure. Pretty sure it’s all going to fit.

I thought about, but I’m going to try not disturbing the wiring harnesses this time. The truck was a bit frustrating dealing with relocating everything.

Unless you want four-wheel steering... 
For years I wanted a Prelude with 4WS, but oddly, you needed to choose between that and VTEC. I wonder if they were somehow mutually-exclusive.
