I have no idea what it is now, if I'm on the gas more than a hair (out of OD naturally) its busy accelerating to around 80mph while staying under 2500......I'm just trying to figure out based on the engine in its old stock form needed to produce to move and maintain the truck at a reasonable speed

Swapping gears, not cheap is going to be about the least expensive option to see any real improvement.

I already have some tall gears, 3.55s because ironically these high gears work better with a stroker for getting power to the ground anyway and I can't go much lower.....the only thing lower would be 3.21 gears

Oh 2nd engine wouldn't be for speed lol! I would make it dis-connectable so It wont get in the way of the 408

A V8 that can do cylinder deactivation would be a better bet. Not as good mpg as a four-cylinder - but arguably better in lots of ways than having a separate four-cylinder in the vehicle.
