Since those are still deemed good for consumption, it does surprise me they don't end up at a food processing plant and turned into preserve instead of just given away. I thought it was quite a taboo in the U.S. to eat food items that were deemed not good enough for sale.

I've called them ends, mostly, but also use heel. Mom never allowed me to eat white bread, but I think I do prefer it for PBJs. Not much of a bread person though because it dries my mouth out, and I'm dehydrated most of the time anyhow.
Not a fan of heels, but I do prefer muffin tops to muffin stalks.

I've never seen 2nd grade food sold or given away except for in prison where all food is 2nd grade or "expired".
The US does waste enormous amounts of food. Some sources say up to 40%, which I can imagine considering how much people throw away just in the course of their meal, let alone what "expires" or never makes it to the supermarket shelf to begin with.

But I guess the problem with losses during transport (either due to damage or just falling out of the truck, which is quite frequent here in Brazil with the grains) are still less frequent there.

Agreed. Prisons should be filled only with people who habitually harm others, or commit egregious crimes against others. US law tends to warehouse people both who are a danger to society (murders, rapists), and people who are not very harmful and would be better served by rehab programs (drug users).
I abetted kids who blew up a group of portable toilets when I was in high school. Although prison food was terrible, I have no complaints in how the system treated me, including the compulsory 10hr days of hard manual labor. Some of the guards were dicks, but then again they are still in prison, and I'm out.
