No wonder you are confused. You are experiencing information overload. Everyone here is trying to help you and all the conflicting advice is now OVERWHELMING.
The way out of the mess is to start thinking for yourself and sorting it all out. Think about the boiling point of water. At what temp does water boil?
Do you think the fans are starting up at an appropriate temp?

IMHO, most electrical connectors on modern cars can only be attached in one way. I doubt that reverse polarity would affect a fan. Frankly, it probably doesn't matter in which direction the fan blows, as long as it blows.

Seriously, your problem sounds like it's not a fan problem. I suggest that you go back to the basic advice that Old Mech provided, and do the self-diagnosis one step at at a time. Go back to Square One.
Keep a written log. Don't take any shortcuts or ignore anything. There are only so many possibilities. That's how all problems are solved.

I respectfully completely disagree xyz. My advice was based on the air flow being right and it's not. Somehow the polarity was reversed. The symptoms described are exactly what would happen with reversed air flow. Even if I had to snip the wires, reverse them and use butt connectors, the airflow must be from front to rear. Of that I am 100% sure and balto just saved himself a wasted teardown.
If there are only two wires to each fan (ass-uming more than one fan), switch them, even if only temporarily. If more than two (per fan) then it gets more complicated but you have to reverse polarity.

This is a dc motor so polarity does matter. And so does direction of air flow. At speed the fan running backwards will pretty well stop air flow through the radiator.

Anyone want to bet that correcting the fan flow corrects the overheating problem? Give me your odds.
Hopefully the overpressured pressure tester and the overheating did not cause any more problems.

From following this thread for so long, im going to say this case is closed. Im highly confident this is the issue. Probably why the previous owner got rid of it, he couldn't figure out why it was overheating.
I don't think the overheating has caused any problems. My intrepid, all aluminum 3.2 v6, had run out of coolant once from a leaking radiator, and a few years later ran at 220-230 for about a month and finally as high as 245 for maybe 2 days before I fixed it. Ran fine for another 4 years later until I sold it a few months ago.
