I'll be impressed when I prefer faux prime rib at least as much as the real thing. Burgers are as much the fixings as it is the meat for me, so I wouldn't mind faux meat much. Chicken tastes like nothing and can be replaced with tofu or soilent green. In fact, soilent green probably tastes better. I've read that human tastes like pig.

I'm not interested enough to research what human tastes like. All I know is some groups of people have referred to human meat as long pig, and I've read it somewhere that people taste like pork.
I won't defend that any further because I simply don't care, and would rather think about something else.

I managed to make my own tofu in home, and it's quite easy, despite take some work if you do small ones each time.
I found this video about make tofu similar to chicken :
But soy sauce it's very far from give tofu taste of chicken or any other meat.
The they digital videos could transmit taste, 90% of the cooking videos will be negativated.

I must admit I'm mildly concerned about becoming a "Soy Boy", but the concern of turning testosterone into estrogen is probably overstated. I'll eat tofu and other soy products if offered, but avoid them if there's other alternatives like chicken.
I made a huge batch of Japanese curry rice 2 nights ago with 3 pounds of pork, carrots, onions, and potatoes. It's in my top 3 favorite things to eat, and others seem to like it too. My wife ate it for lunch and dinner yesterday, and I've never seen her willing to eat the same thing for both of those meals before.
That reminds me, I should cook up another cup of rice so I can have the rest of it for lunch.

Fermented soy have no polemic, and that's why misso, soy sauce, curry, natto and tempeh are fully safe.
But keep atention if your soy aouce was natural fermented and not chemical (fake) fermented.
Non fermentred soy have some polemic but it'a not for much concern unless you only eat soy as protein source.
Soy fhytoestrogen (isoflavone) have no harm to men, and indeed it's not very like estrogen, otherwise it would help women a lot more than in reality.
About anti-nutrients, soy have it, but beams also have, and cooking destroy most, and if ou le thet grains 12 hour in water before cooking it is lowered even more.
Some vegan burgers manufacturers are using pea protein extracts mixed with wheat protein extracts, and not soy or justr soy.

Forgive me for the fast type and errors.
Yes, for soy grains or even bean grains, you must let it on water, soaking, full covering it, for 12 hours or more (better 24hrs), and change the water a couple of times or more (better 4x times), replace with clean water as the old water get some color. And when cook, don't use the water from soaking, but new water. Also cook on pan boiling in high temerature for at least 10 minutes, or pressure cooker, since the high heat also helps neutralzie some anti-nutrients. Do not cook in low temperatures !!!
Some nutrients go away in the soaking, but are ther much less than the nutrients non absorbed by your body due the anti-nutrients factors, so in the end the soaking and high temperature approachs wins.
If you have slow digestion of feel not ok after eat beans, these types will help.
Another trick it's to let the grain geminates just a little bit (after soaking process), just a little up to a very tiny "small tail" appears. When the grain geminates, even a bit, it became more nutricious and easier for digestion. But some people may confuses the tiny little tail, in the cooked grain, and think it's worms.
For germination you must keep grains weat and in the dark, after the soaking process. But wather with few water. Youtube teachs the germination tips.
